Just an hour ago I did dismount a lightly armored cav riding a hunter and as he fell I stabbed a pike into him and he still got up and wrecked me in couple hits thanks to me being stubborn and not switching away from the pike.
So I don't see why its supposedly impossible to play cav with the new fall damage.

Give it a stab to the side once it's heading for you and it will mostly be down cause of the speed.

Or javelins, I've found javelins hitting my horse when i'm durring around with it do shittons of damage, one of them usually takes 40-60% hp.
